Idag gjorde vi hemgjord gnocchies med G :) Något vi lärt oss på vår italienska matlagninskurs. Och gudbevars va de blev gott!!
Receptet är enkelt för gnocchies:
1 kg kokt potatis (muldig och gärna gammal)
1 ägg
400g vetemjöl
40g parmesan ost rivet
salt
Koka potatisen, skala den och mosa den sedan till potatismos i en skål. Med hjälp av en gaffel blanda in ägget. Blanda sedan in mjöl i små mångder tills det blir en stor mjuk klump :) Fortsätt sedan knåda in parmesan osten och saltet med händerna och låt sedan "degen" sitta en stund. Dela sedan degen i mindre delar, rulla ut den till korvar, skär ut till små bitar och tryck till dom med gaffeln lite. Koka upp vatten med salt, lägg i gnocchina i mindre mängder och direkt som de stiger upp till ytan, ta ut dem och blanda dem med lite tomatsås/pastasås, så dom int klibbar ihop sig. Njom njom njom!!
Helgen på Gold Coast var härlig! Gjorde så gott att få bara vara och att inte ha något planerat och att få njuta av havet och solen. Livet här går lite upp och ner från dag till dag. G's mamma är tyvärr sjuk i cancer och har tyvärr inte länge kvar mera. De är tungt. Tungt att tänka att någon som verkar må så ok nu inte har länge kvar mer. Och de känns så orättvist att de gör ont. Tungt att se ens älskade lida och sörja och inget man kan göra..förutom att vara där. Många gånger har ja också fundera att vad månne är värre, att förlora någon utan någon förvarning? Eller att veta att någon kommer att gå bort och gå omkring och "vänta"? Knappast är någondera lättare att hantera, båda lika svåra och tunga. Samtidigt så försöker man anpassa sig med livet här och med att komma över hemlängtan i hela denhär soppan. En dag i taget och njuta av varje dag! De är det man skall göra! Och de försöker vi göra. Idag njöt vi med nami nami pasta :)

Today we made Gnocchies with G :) One of the recipes we've learned to make at the Italian cooking class. It's actually very simple and it's sooooo good!!
1kg of potatoes (old ones)
1 egg
400g plain flour
40g parmesan cheese
salt
Boil the potatoes, peal and mash them in a bowl. Mix in the egg with a fork. Mix in in small portions the flour with the help of the fork until the mixture becomes a soft lump. Mix in the parmesan cheese and salt with your hands and then let the dough stand for a while to rest. Then divide the dough into smaller pieces and roll out into "sausages" that you then cut into smaller pieces and press them down a little bit with a for. Boil up water with salt and add small batches of gnocchies into the boiling water. When they rise to the surface, take them out and mix them with some pasta sauce in a bowl (so they wont stick). Enjoy!
The weekend at the Gold Coast was so good! Felt so good to not have anything planned and to just enjoy the sun, the beach and the ocean! We were both so relaxed there. Life here at home is a bit of ups and down. G's mother is unfortunately sick with cancer and has unfortunately not very long to go. It's hard. It's hard to get to terms with that someone who seems to do so ok now, does not have long to go. And it feels so unfair that it hurts. So hard to watch the one you love have to go through this sorrow and being so hurt and there's nothing you can do..except to be there for them. I've sometimes wondered, which is worse; to loose someone suddenly? or to know you're going to loose someone soon? I don't think it matters, they are both hard. And in the middle of this we're also trying to settle in and I'm trying to deal with homesickness.. phew.. But! we take it one day at the time, and enjoy every day. That's what one needs to do and that is what we try to do! Today we enjoyed some good pasta! :)
